My invoice billing keeps appearing in Dollars (USD) despite the fact I have chosen 'United Kingdon Pounds (GBP)' in General Settings.
Does anyone know how this can be rectified.

Are you referring to the order confirmation email your clients are getting?
Click the "change formatting" link in your general settings and make sure everything is properly configured there, as in the following screenshot:
If you're referring to the actual invoice you receive from Shopify, we charge the monthly subscription in USD, which is then converted by your credit card processor based on the current exchange rate.
