We did get this resolved. We had to contact Shopify support. The issue was referred to a tax specialist at Shopify who had to make a backend change to our account. The change directed our account to use a legacy tax calculation module. The legacy system allows you to charge a manually set tax on a collection. So we made a collection called "Resort Tax" and added all of our products to the collection. This was daunting at first since we have thousands of sku's but we were able to get it done fairly quickly with the bulk editor. We were then able to set the tax on the collection in admin settings. All new products have to be added to the collection. Seems to be working for us now.
I am having this same issue. We’re you able to separate the resort tax from the state tax or did you have to combine them in the override and may I ask what change Shopify made on your back end?
Any help would be greatly appreciated I am having a hard time getting suitable answers from Shopify.
