Hasn't made any sales nor has any one added to cart. I have been getting a decent amount of people to my site, and they seem to be interested but then they leave.
I just want some suggestions on how to convert more visitors into customers.
Also I have been using google ads for advertising, is that the best advertising platform to use or do you reccomend something else?

Anyway, on to your questions!
Are you involved in the rare coin community? Is it possible many of them look around often but rarely make purchases? Do they place a lot of value on reputable sellers in this area (for example, are they likely skeptical of claims of authenticity, etc)?
If the answer to those is no, Google Ads could work, as well as Facebook and other social platforms. I think it depends a lot on the niche you're in. Definitely worth digging into where they tend to discuss things (forums, FB, or somewhere else).
If they tend to be more skeptical or rarely make purchases, you might need to play the longer game of social proof. There are some easy steps, like showing a face on your website, quotes from friends or purchasers about your quality and care (again, faces here wouldn't hurt either :). But also, if you're interested in the topic, creating a social media account (or even a Facebook group) where you can post often and engage with your visitors.
Last, because this is my specialty: Having videos on your website, product pages, etc, can help improve time on page and trust. I'm not too familiar with user review apps on the Shopify store. Each one probably has different features.
But they don't necessarily have to be reviews when you're starting your online store. You could also experiment with putting quotes from eBay reviews in different sections of your website for social proof.
And just to reiterate, I've often read that having a face next to a review/quote/etc can have a powerful effect on buyers, so if you can find a way to include that somehow, it could have a big pay off. I realize that ebay probably only has tiny pictures next to review lists, and it may not be feasible :)

I would start by looking at what works when you sell on ebay. Are there any themes or best practices that you are missing with your website. Then I would spend some time benchmarking against other similar websites. How does your pricing compare? Your product imagery? Descriptions? Are there any credentials that are important given the high prices of some of the items? What about a page outlining your shipping and return policy? For example, would this site be another option for someone looking to purchase gold coins? https://www.moneymetals.com/american-gold-eagle-coin-one-ounce/7 What do they do well?
I would suggest to check your check out process. Is there any hurdles? I would recommend to make the checkout process as simple as possible for your shoppers.
Also work on to build customer trust, add some trust signals. Trust Signals build customers trust and help users to feel more secure in their buying decision.
Send abandoned cart emails: If you have lots of traffic and little sales due to abandoned carts so you can get lost revenue using abandonment email campaigns. Ads can be a great way to increase traffic numbers for your website. However, if you have yet to see an adequate return on investment, it may just be that you’re making some common mistakes leading up to getting your custom audience to your landing page.
