I tried searching the forum & Google for this question, however, it doesn't seem like there's any clear answer for how to setup and enable your Shopify store to get Google Shopping Product Reviews (Stars) when running ads.
I see major brands like Walmart, Target, etc running ads for my products & they have 3/4 reviews that are 5/5 stars.
I know this would increase the CTR like crazy, however, unable to locate this anywhere online.
It doesn't increase the CTR like crazy, but I generally find it helps the AdWords performance of my clients.
You need to sign up for the Product Ratings program inside Merchant Center. You will need to fill in a form with some questions that are used as a verification process. You need at least 50 legit reviews which means the inevitable negative reviews sprinkled throughout.
Once you get approved, you can submit your product reviews feed to Google. Some Shopify apps that do this is Yotpo, Judge.me, and the Enterprise plan of the Product Reviews Addon. Shopify's free review app does not.

Yotpo is definitely the most expensive.
My favourite is judge.me https://apps.shopify.com/judgeme. It is affordable and the developer PJ is a nice guy who regularly updates the app to keep up with new features that get released in expensive competitors.
There is a simply way, but first Shopify need to apply to Google Product Ratings, then it's easy for merchants to setup via Google Merchant Centre. I've explained how it works and next steps here:
