I have multi variant products and use google shopping to advertise.
I want to utilise custom labels, but I can only set custom labels at the product level, not at the variant level.
So I am unable to control bidding on variants.
Has anyone else resolved this - namely being able to set google shopping custom labels at the variant level?
That sounds correct, you have the option to use feed rules in Google Merchant Center : https://support.google.com/merchants/answer/7450276?hl=en
You can also add supplement feeds : https://support.google.com/merchants/answer/7439058?hl=en
Or if you want to have more editing power at source, consider other feed supply solutions.
Every tool has positives and negatives. Not all tools are equal or offer a solution to everyone's needs.

Being able to control simple ecommerce data in a product marketed as a solution to control ecommerce data would seem an obvious requirement. Why offer a variant solution if it is not implemented correctly.
But yes I will leave feedback. The google shopping app is deficient in many areas.

I'm being helpful to find a solution, I offered 3 ways to fix the issue. Please note I am a community member and not a Shopify employee.
And because you complained about a Shopify tool, I explained the best action to get Shopify to update their tool. And explained the realities of tools. It's impossible to have a tool being perfect. But if you like to see a tool improve itself, submitting feedback is the best way.

So I think your comment was based on assuming I am a Shopify employee, which I'm not. I provided solutions with guides that you can follow. IE: how to resolve the issue and complete your goals.

As already mentioned you can set custom labels for product variants if you use a feed management platform, assuming you pull eacg variant as a separate product into the feed. This is what I do as standard for exactly that reason - there are pros and cons but I do find overall I prefer being able to control each variant.
Re having to manage data in two places that's not an issue - any changes you make in Shopify will automatically be updated in the feed. The only thing you may have to do if you make a lot of major changes or change prices is do a manual update of the feed to refresh it and keep it synced, which is nothing more than hitting button :)
By the way I use Data Feed Watch - I'm not affiliated or anything, it's what I'm used to and have used for a while and find it very easy to use and set up with Shopify. Their support is also excellent and very responsive and they do a setup service for I think £99 which is a no-brainer if you don't have the time to do it yourself.
