I am tweaking the site 'home' with the aim to get more sales. I use the theme 'minimal'.

I think to get more clarity in what I offer I might want to get one title phrase at the top and then I would like to put the collections in the body as a main part. Rather than having the collections only in the menue to click. I hope that this is doable, but before what do you think of it? In total the page should look clearer and more "lecker".

Your home page looks fine at first glance. Typically, you shouldn't be sending traffic to your home page. You should be sending the traffic to collections or product pages. You would be surprised at how many people buying things without ever viewing the home page.
