For beatcyclingclub.com we succesfullen added the GA tag, but now want to add Search Console as well. So... What's better?
Adding a single Google Tag Manager Tag from which to rule them all...?
OR: just add another Search Console tag?

I'd always recommend using Tag Manager where possible just because it's so much easier to install/manage any other tags you may want to implement at a later date (think heatmapping tools, email marketing analytics blah blah blah). Plus of course to benefits to page load time when only one tag has to be loaded rather than all of them....
I'm not sure how easy it is to set up with Shopify though - maybe there are some developers here who can give some guidance on that?
