What to do with pages of deleted products (deleted url's)
i know i need to redirect them (301) - but where ? what is the best option ?
should l redirect them to another product and that's it, or it's better to redirect them to one specific page, that can handle all the 404 pages ( like with all the categories for example )
one more - can i delete these pages of old produts ? maybe after a year , or i soudln't do it ?
A common practice is to redirect them to their category page.
I would redirect to a product if it is very similar, or even a newer version.
If you redirect (301) then it is not a 404 anymore. Unless you redirect to a page that does not exist!
Once you set up a redirect, then the product is not required. You probably want to keep the redirect in place forever.
If the redirect goes to a very similar page, then Google will transfer their signals (like PageRank) over to the new page.
If not, the destination gains nothing. But Google is still ok with it.
Category pages will probably not be similar enough, so they won't get any SEO benefit from the redirect. But it's more about user experience and helping Googlebot tidy up.

It all depends on what you are using the redirect for. If you created a new product listing on your site for a deleted product, then I would recommend redirecting that new product URL to the old product URL.
If you no longer carry that specific product, I would redirect the dead URL to a collection related to that product on your website. If you do not have a related collection on your website the next best thing to do would be to redirect the URL to your homepage.
