My shop has been live for 2 and half months. the traffic is ok 7500 visitors, but I'm losing between 2/3rd of my customers between "Add to cart" and "Check out". For instance, for the last 2 months the numbers shown are 165 Add to cart for only 44 who reached Check out. The abandon cart just show 5 customer info, so they cannot reach the checkout information page.. Here is the shop:

I already add contact, phone number, our story, popular product to homepage, and add on the product page product review app, shipping policy, free shipping rate information.
what can I do to convert? Or what I should change?

That's really hard to say what exactly is causing the shopping cart abandonment rate.
To be honest, your site looks great from my perspective. The only thing that jumps out at me is .
I'm not a fan of having extra steps for a user to complete before purchasing. It just makes things harder, but I do understand if you need it for EU policies.
You could try one of those cart abandonment apps, that may or may not help. In addition, maybe making some limited time promotions from time to time to get urgency for users to complete the transaction, but don't go too far with promotions.
This is only what I can see, there's plenty I can't see.
My advice is to start tracking your data and then make the changes and see if it impacts your metrics. You need to look at it from different perspectives like conversion rate, bounce rate, time on page, cart abandonment rate, and product detail view rate at the minimum to understand what can be improved.

Welcome to the Shopify family, and congratulations on your store. Your store experience is actually quite nice, consistent. I don’t the experience might be the problem.
That being said - not all traffic is equal. So there can be a few reasons for no conversions (a) You’re sending the wrong people to your website. OR (b) There are issues with your website experience.
What kind of targeting are you using for advertising? Is it sending the kind of ideal prospects you want to your store? I think you should do an audit of that data.
It might be the quality of traffic which is the bottleneck, since you mentioned that the bounces are also very quick. Figure out which it is and make changes accordingly - and
I think you’ll be on your way to more conversions!
That being said, I do have a few observations on your store:

I have been through your website it looks pretty clean and well maintained which is great!
I would like to share a couple to tips which will help you out
1. Addition of most viewed or most liked section on your homepage will significantly increase the percentage of gallery review
2. Ensure every image has other 3-4 images with different angles which will help the customer to get a detailed view of your gallery with this you can also add a product zoom in to fill the browser window.
3. Engaging the audience by writing blogs with better titles and promoting them on various social media platforms will be helpful
4. A search feature on your homepage will give easy access to customers as more than 50% of users on a landing page head straight to search box to navigate the site.
5. Ask your customers to rate your products as this will help build trust and loyalty for the brand.
6. You need to create urgency and social proof on your store for that adding visually attractive stickers like a number to products left, upcoming sales, In trend will grab the attention and excite the customer.

I think your website language can be first problem. It's in different language, so people just come around your website just to compare price with your competitors...I'd prefer English as universal.
Second problem can be copy of your website.
You website copy should convince your customer to purchase your product right now, Give them a reason to buy now.
Otherwise, they will add the product to cart and then they 'll say you good bye back to you.
