Really stuck: Can't find a way to display a header message without making the header bar too big

No matter what I do adding text to the top stretches the image

This is the size I would like it to be:

Here's what it looks like with an announcement bar:

Here's what it looks like with a menu:

and a similar issue with changing the logo to be text. I've tried editing the liquid but I can't seem to find an answer to this particular question online. Please help
