Once an order is marked as "paid" it would not be possible to mark it as "unpaid." However; what you can try doing is refunding then cancelling the order. From there, you can recreate the order in Orders/Draft Orders so that you can start the process again. We have a help doc here that dives into how to create draft orders should you need it!
