Fedex Ground Transit Time

Hi Guys, 

Maybe someone can help. 

We ship a perishable product (cheese) within Canada only with Fedex Ground. Most areas are up to 3 days, which is perfect.

Then we get some orders that are 4 days or more delivery time. It's too long for us. 

So our checkout shows

Fedex Ground
Purolator Express 

Is there any way to display Fedex Ground for up to 3 days transit time and if its over to stop displaying it and only show the Purolator Express. 

Anyone have experience with shipping perishables?

This is an interesting query. I would like to know how you are tackling this problem right now? Have you customised the delivery estimate to hide FedEx Ground for orders that take more than 3 days?
