Order status set to payment paid fulfillment unfulfilled

So I'm new to shopify. I have been looking for two days on how to adjust settings so when my customer place an order the system will automatically charge their card but the status will be "Unfulfilled". Once I pack and ship the item I would like to change it to "Fulfilled" . How do I do that? Is it even possible?

If you sell physical products that you're packing and shipping yourself, you can follow these steps to fulfill orders manually.

Once an order is ready to ship, head to the Orders section in your admin and click on the order number. From the order details page, you'll either be able to select Create shipping label if you're using Shopify Shipping, or Mark as fulfilled in which case you have the option to add your own tracking information. Either of these options will result in the order being marked as Fulfilled in the admin.
