Payment Gateway in Test mode

Hello,

When my site went live my payment gateway was in test mode though I had enabled it to accept payments.  I had three orders all of which were fulfilled and in their order details, there is a payout date indicated.  Their sales however are not included in the analytics.  I am wondering if the sales were in fact successfully charged and if there is a way to include these sales in the analytics.

Sales through test payment gateway are not reflected in the Analytics. Why would they?

What if I want to make a payment in test mode but it requires me to delete my app will I loose all my product information, etc. Because I don't want to run into that issue with products being fulfilled. Your answer is highly appreciated.
