not sure if you found a solution but I think I have it sorted. My situation is that I'm a florist and we don't ship flowers but we do offer local delivery and store pick up and I wanted to nix the shipping button. By using an App called Store pick up and delivery by Zapiet I was able to uncheck "shipping" and it's gone...
This solution does not work. As per the shopify warning message, clients will not be able to check out. I tested it and that's exactly what's happening. No checkout is possible. I am unable to understand how can shopify be so unhelpful with this. This is ridiculous. We need this option! Those of us that offer free shipping simply DO NOT need the shipping page in the checkout. We want to completely remove it. Telling us to fix it by marking all products as not shippable is ridiculous. Of course the product is shippable. I still need to collect a shipping address, etc...I am simply offering free shipping and I DO NOT need my clients to take one more step only to then select what I already told them 100x before (ie, "Free shipping). The more steps a client needs to take during the checkout process, the more sales we lose. Why is this so difficult for shopify to understand and to fix???? Truly disappointing customer service.

You won't have to mark all products as not shippable.

Hey @claudio4 I just created a test store with one example product and followed the steps and it worked -- I'm able to checkout and to have the "Pick up" option appear.

Enter the password "glekle" to enter the store. You can then navigate to the test product:
And follow the checkout process. (I'm using the "bogus" payment method right now, and also the product is free so it won't ask for any payment information)
When you follow the steps, what is the problem that you're seeing on your side?

The problem I run into is that taxes are not being charged - this removes shipping options and if a person puts in their address, they are charged no taxes if out of state (we're under 15 minutes from two states other than the one we're in. If there were a way to remove the option for the person to put their address in at checkout, sales taxes would always be charged (which is correct for our state (MD, USA) - they are coming to the store to pick up the items, so need to pay local taxes.
Any suggestions regarding this issue?
What we've tried - creating a tax override for the other states becomes too confusing as some of them have local taxes as well as state
@Greg_Sadetsky how did you get the pickup address to show at checkout and avoid the screen asking for an address at checkout? I did follow the instructions, but don't find anything that addresses this issue.

@claudio4 This happened to me at first (unable to check out), but this was because products were marked as physical products - uncheck that and it will no longer tell you you can't check out for lack of an address.
Our problem now is that the checkout process asks for an address and when the user enters theirs, our local sales tax disappears if they are in another state - this does not conform to most state's laws about buying online and picking up... or buying online period. Local sales taxes (to the buyer) should be charged for purchased and shipped items, and local sales tax (for the seller) should be charged when purchased online and picked up in another state.
