I'm currently working on an app to allow an admin to schedule multiple products to become available at once on a future date.
Something like what's already available when editing a product but for multiple at once:
The problem I'm running into is that it looks like the GraphQL API doesn't support getting or setting publishables (although the GraphiQL App works).

Am I just sunk, here? Is there no way for me to implement this functionality?
I'm not sure where you ended up on this, but if you're able to achieve that, I wonder if you can develop an additional app that would be extremely useful - create a recurring schedule of availability and unavailability. To give a specific case, everything in my store is delivered on Sundays. Certain products need to be ordered by Thursday. Other products can still be ordered until Saturday. My store needs either: an app that makes specific products unavailable and then available again on a recurring schedule, or an app that can calculate the delivery date of every individual product based on order time.
