We made an embedded app for printing labels. The app is made in Polaris & works well in the Shopify admin.
However some users are experiencing problems opening the embedded app in the Shopify app on iOS. When they open the app they see a blank screen and get a reference error: 'Can't find variable: AppBridge'.
We tested it on different devices / iOS versions and there the app was working well.
Where do I have to look to fix this problem?
It's important for us to fix this as users frequently print labels on their mobile devices.
One of the users experiencing this problem uses an iPhoneX.

I apologize that some of your users are seeing this issue. We are aware of the issue and have published a new iOS version to address it. From the user-agent you posted it looks like that user is using Shopify Mobile 8.40.0. The fix is contained in Shopify Mobile 8.41.0. If you're able to communicate to them that updating their Shopify app to the latest version, then the problem will go away.
