I've got a big client who I'm helping develop a app for that will have shopify installed into it with a full e-commerce platform on it. We the SDK's to the store and API's to do this and just struggling to find out where we get this from... Any help would be fantastic

The app is developed with Google flutter and drives content and engagement similar to headspace. There is a requirement to add the simplest method for a native mobile shopping integration with the objectives for it being:
1 - A native experience (via SDK or similar) so that we aren't referring to web-enabled web pages in the app
2 - A simple ongoing integration so that we don't have to develop heavily to add additional products or category pages as the app grows into new products
3 - A good backend that handles e-commerce, stock, ordering and deliveries, etc...
4 - Later in the development of the app we will want to add links to view the whole store, so we will need to keep this in mind as we bo about developing this
The immediate requirement is to add a product page that is available via a deep link in the app in various places, this will need to have a checkout and be able to take data from the user's profile to fill checkout details and assign a Shopify account based on this interaction for future purchases.

Interesting, so if I'm following, you can totally leverage the Storefront API on Flutter https://help.shopify.com/en/api/storefront-api/reference. Bring data such as products/collections, create a checkout, associate a customer, etc.
(1) This is why you're using Flutter, I understand.
(2) If you pull the product/collections from Shopify you should be able to achieve this.
(3) This would describe Shopify.
(4) You would need to build deep links to your pages in the Flutter app to achieve this.
