I noticed that Shopify has created a guide "Build a Shopify App with Node and React". Does that mean this is the preferred way to create apps? Is there a similar guide from Shopify for Ruby on Rails?

At Shopify, we're big on Rails, React, and GraphQL, but you can definitely develop your app(s) in whatever way that works best for you. Right now, we offer APIs for Ruby, Node, and Python.
The tutorial is only half the battle. After I submit my app I was not able to go productive because you need to implement webhooks and wait for subscription scopes. You can not use search terms, e.g. if you sell bananas and one shop use it as shop name then it is not allowed to use it in your search term. This means the store user will not find your app. I submit the similar app to BigCommerce and not problem.
