I set up the "how did you hear about us" during checkout and when I tested it it works. It's a mandatory field, captured data is in "Additional Details" and it's there when I export the orders.
However no live orders have captured this data and I can't figure out why.

Just went to your site to test this.
Did you insert an additional script/ use a custom app to put this as an option?
I went into inspect your page and there isn't anything capturing data here...lol are you trying to send data to a specific destination?
There is a script below this but it doesn't say where the data is supposed to go...

This is an accepted solution.
Looking at your product page I can see a buy it now button. That adds the item directly the cart and skips the cart page entirely. Since the cart page is where you are capturing the extra info I can see how a customer could skip that process.
If this is critical info you may need to consider adding the field to the product page, or removing the buy it now button (and just leaving the add to cart option).
