Adding /replacing text for "Special instructions for Seller" - Brooklyn theme

Hi there, I searched and found some info, but none of the past suggestions are working for me. I'd like to do one of two things, if possible with the order notes.

1. Replace the pre-populated "Special instructions for seller" with custom text. I can't find this line ANYWHERE to edit or append - but also not an expert.

2. Pre-populate the text box for the special instructions with directions (for example: "Please include any custom requests here.").

Are either of those scenarios possible with the Brooklyn theme, and if so, would appreciate the help.
