One of these so-called "SEO Experts" suggested that my site would perform better for organic results if text could be added beneath the products on the collection pages. How would one go about adding a text field below the products on a collection page similarly to the "Description (optional)" field that displays text above? Is that even a thing?

SEO works brilliantly when the right researched products niche related keywords are added in the products description. It doesn’t matter where the text is placed on the page because the google algorithm crawler scans for the content of the page as opposed to where the content is positioned on the page.
The most important thing is how good your keywords are – as they are responsible for your ranking on search results.
While adding products in listing the backend search terms do play an important role in SEO.
