Have a question about setting up variants for a shoe that is available for mens, womens and kids.
The problem here is that each gender has specific sizes.
So for the mens, the sizes are
EUR38 , EUR39 , EUR40 , EUR41 , EUR42 , EUR43 , EUR44 , EUR45 , EUR46
The womens sizes are
EUR36 , EUR37 , EUR38 , EUR39 , EUR40 , EUR41 , EUR42 , EUR43
and the kids sizes are
EUR31 , EUR32 , EUR33 , EUR34 , EUR35 , EUR36
Is there any way to have just 1 product, but be able to have all these variants/conditions?
Or am i better off creating 3 separate products with each having their specific variants?

In this specific case you're much better off separating the product in to three separate products. Each can have its own sizes and respective size guides, it will be easier for the visitors to identify the one they would need and it would make it much easier for marketing feeds to distinguish between them (eg. Facebook's Product Catalog, or Google's Shopping Catalog).

So the follow up question to this would be, now that there are 3 separate products, how can we de-clutter the collection pages so that only mens or womens or kids products would appear instead of them ALL showing up at once?
It kind of depends on how your collections are set up in the first place. One way to go about it would be to tag products with male, female and kids, and use those to adjust your collections accordingly, like so:
The all conditions option will make sure the collection only produces only shoes for women. Collection setup depends a lot on how your store is built and marketed, so your mileage may vary.
