I just added a new theme (free trial for now) and I started to customized it, but I noticed that I can customize just the front end. My question is, if I'll buy the new theme can I customize also the back end (like main menu, filters...) without modify my actual website that is live? For Example: from the new theme If I click on "Edit Menu" it shows my current back-end navigation menu, and If I make any changes everything go live on my current website, I would like to make this changes just on the new theme, so everything can be perfectly done before the new website go live!

That's a really interesting question, I can totally see where you are coming from in terms of not wanting to have these changes occur on your live site while you're still testing things out. What I would recommend doing, in this case, to prevent any kind of crossover between the themes is to make new menus for this theme specifically.
What you will want to do is go to Online Store > Navigation and "Create a New Menu". From here you will make a menu named something like "Main Menu 2" or "Test Menu". You will then be able to select this new menu in the theme you are working on and not have it affect your live site in any way! Buying the theme will not change any of this in the slightest. Whatever changes that are made to the back end of the store will affect the front end if it is part of your live site i.e. if you change a menu that is part of your live theme the change will be seen on the live site. The same would ring through for any changes made to products or pages.
