My website is www.aglowcandleco.com and I'm using the Brooklyn theme.
I've created a few slides for the main banner, but my issue is that the header text, subheading, and button are not showing on mobile, but they are on desktop. I'd like them to show on both mobile & desktop.
Related to this, I'm wondering if I can set it up so that certain slides do show their text on mobile & desktop and other slides only show the text on desktop? Or does this have to be a site wide setting?

As I suppose, you use the "Adapt to first image" setting of the Slide height:
Also, as I can see, you have modified the CSS styles of the Slideshow section to hide the Header for the Mobile:
So, to show the Header for Mobile, just remove this custom CSS code.
Also, you can switch the Slide height setting to the "Full screen" value, to show a Header right over a Slide image:

You can use "Full screen" value for "Slide height" setting of the Slideshow:
