You could always change your settings to 'manually capture payment' so that the orders are simply authorized. You can change this setting under Settings > Payments:

Thanks for the reply. But what I really want is customers coming out to us asking how to change the shipping address or order variant and that order has to be put on hold till the customer replies so the wrong item will not be shipped out/products will not ship to an incorrect address.
