Adding pick up/delivery/shipping date into order confirmation notification that goes to a customer

Hello,

our customers can choose an option of local delivery, shop pick up or shipping when proceeding with order. Whey they receive an order confirmation, there is missing a date of the pick up/delivery/shipping they did choose when placing an order. 

Is there any way we are able to add this date into our Order confirmation notification email? I've been looking for a while and so far found only the option of adding a date when the order was placed, but we don't need that day.
