Im in a balloon gift business and customer seems to confuse on shipping & billing,
how should i set the "shipping" name to "Receiver's Address?
and "billing" to Your Contact Details?
Also, If customer decided to collect at our store, how is it possible that they dont need to type shipping details?
@Pat123321 Go to your Shopify admin -> Online store -> Themes > click on actions and then select 'Edit languages'.
There you can search for any string, in your case search for 'Shipping Address' and 'billing' and change the language as you want.

I believe you can't disable the shipping address option but you may use the custom note at the cart page to collect the note from a customer that they will collect the items from the store.
