I seem to be having issues with the dispatched/tracking notifications sent to the customer when fulfilled as not sent.

It looks like the notifications are being sent, but the issue is that the emails that are being sent are bouncing. This could be due to a number of reasons. If you look further down in the email that you pasted the text from, it should give some detail as to why the email bounced (not a valid recipient, or something else).
Are you getting these bounce notifications for every order? If so, there may be an issue with the email address from which your notifications are being sent.
If you're only getting the bounce notification for a couple/few orders, the issue may be that the customer misspelled their email address in the checkout.
