Brian here from the Shopify team. :)
It is not currently possible to do this through the default Shopify user interface, however there are some methods available that would allow you get this result.
The first would be to use Webhooks. Webhooks are essentially little processes that are triggered by certain actions, which in this example it would be a customer ordering a particular product. You can find some more information on Webhooks in Shopify here: https://docs.shopify.com/manual/settings/notifications/webhooks. If you are not familiar with using these yourself, I would suggest reaching out for some assistance on our Shopify and Ecommerce Jobs forum, or perhaps get in touch with a Shopify Expert to help get this all set up. :)
It would also appear that the Email Template Editor app by Klaviyo is also able to send out different notifications based on the product ordered, however I would suggest getting in touch with them to see how this might work. You can find the app here: https://apps.shopify.com/email-template-creator
Finally, you could instead use the one notification, but have it include some IF statements so that it shows certain information depending on if a particular product is ordered. This option may be particularly useful if the differences between the three templates aren't going to be drastic (i.e. just some different text, rather than a whole different layout).
