From your screenshot, it does look like your spf record is correct. I also recommend reaching out to your domain host directly to confirm the set up is as needed from their end too. 

 

Have you received any updates from Deutsche Telekom yet?

I set up all spf records as recommended by my domain host Namecheap.

Actually, it seems as if their mail server IPs are blocked and causing the issues.

Is there a way to obtain the email headers from the email notifications that are being sent out by Shopify?

They tell me that they need the content to resolve the issue, but the email headers from the bounce back messages are not sufficient.

One of our client stores is still having a problem with email – according the them "Just an FYI that the shopify emails go down at least once a week still." ...so I got her to elaborate, and send me some of the bounced emails. Two example she send both have recipients are @cogeco email addresses. Is there anything we can do here?

Examples "Undelivered Mail Returned to Sender":

So it looks the emails are getting treated as spam and rejected.
