We have a watersports equipment company and we sell items on our website using Shopify, Ebay (which has its inventory synced perfectly with Shopify), and we have a physical store (looking to open a second store).
In the store we use the XEPOS till system.
What we want is to manage the inventory so that if one item is purchased in the shop, on Ebay or from our website, the stock will be reduced on all of our channels.
Trying to sync the XEPOS till to be managed by Shopify (products, stock, barcodes etc) does not work.
Can anyone give us some advice on what solutions they use if they have similar sales channels, or what might be the best way forward for us.
Is it best to use an app, or another till system, possibly even Shopify POS?

It probably depends on how committed you are to using XEPOS. If you are open to change then you could check out Shopify POS but make sure it has all the features you require.
Taking a look at XEPOS is seems they have an API on their commerce platform so if you could check with them if they can provide API access to your POS system then you could build an integration with it and Shopify. The other question is where you want to manage your master inventory levels as this will determine where you want to adjust stock.

The Shopify sync that XEPOS offers means that the stock would be managed from XEPOS. It doesn't seem to offer any live update of inventory across the sales channels as products are sold and the interface is not nearly as user friendly as Shopify.
We are considering Shopify POS as one of the possibilities for moving forward.
Looking at apps to manage stock sync seems to be a minefield with no bulletproof solutions so far.
Essentially if you could get XEPOS to push inventory to Shopify and pull orders back in then you are 99% of the way there.
In terms of sales channels are you running them all through Shopify? If so they should be in sync but it depends on the XE data flow.

Tracking inventory consistently across different online platforms and multiple store POS is certainly no easy task, and there isn't always a perfect ready-to-use solution for the softwares you're currently using. I agree with other commenters that you should look into using a POST (i.e. Shopify POS) that does support this syncing, as well as all the existing features you use currently.
If you do think staying with XEPOs is important, then you would need to look into building a custom integration solution.
