We are experimenting with using Draft orders so that our call center can enter orders directly into Shopify. The module works great but there are a couple of "manual" options available when an order is being created.

Discount
Taxes
Mark as Paid
Mark as Pending

We would prefer that these fields NOT be available options to populate for our call center. Is this something we can customize in Shopify?

It is unfortunately not doable as it is a Shopify core functionality which cannot be changed
