Rebuilding a Product Catalog and Launching with Minimal Downtime

I'm currently working on rebuilding my website's entire product catalog. Right now we have around 350 SKUs that all have their own web page. I have started the process to rebuild the entire catalog in a spreadsheet that uses parent > child products.

What's the best way to import the new catalog without destroying the current website?
How can I handle the redirects?
What's the best way to handle to canonicals?
Is is easiest to blow the entire thing up and start new, or slowly work through the dumpster fire of data piece by piece?

Appreciate the insight!

I know your pain. I had 8,000 products on my old website and had to do similar thing.

I reckon you just do one at a time. Example

New product (10 variants) update new product than hide the single products of this. Rinse and repeat.

I personally had a lot of dramas importing and exporting the products with excel. Lots of bugs went onto my products. Mostly likely because the file was so large. I think its better to do one at a time that way you know each product is perfect.

Could hire someone but I think something like this would cost way to much.

Thanks for your input. To be honest I'm pretty surprised how many people have told me the native product export/import functionality is so buggy. Because the catalog rebuild will be quickly followed by a front end redesign I'm not too worried about going piece by piece, but we also have a lot of old apps. Sigh, to go with a clean slate or not.... Thanks again!

Yeah mate. Think its better to go piece by piece than you can have better quality product descriptions etc. Might be good to just clean up everything start semi fresh. Here is some videos I did that might help you out.
