I set up Joe's Toes using a customised version of React theme. I'd love to do a French and/or Italian version. Is this possible or do I have to choose the Coffee theme?
Can the currency be changed to match too?

Some nice work you've done there on your store :) There are a couple of options if you'd like to set up a bilingual site:
1) You could use the Bilingual Coffee Theme as a starting point, and then adjust the colour scheme, fonts etc. to suit. You'd have to re-do some of the formatting in your Theme Settings, but a lot of it could be done very quickly - upload your background image, change the fonts, set your colour scheme, and so on. All of that can be done within the Theme Settings. (You can always revert back to the React Theme if needed, too).
2) We have set up sites for a few clients who want the Bilingual site to be exactly as per their current site. This is a bit higher in price -- as it takes more time -- but that's another option, and would allow you to 'mimic' your current store design but still have two languages.
At this point it's not really possible to just 'insert' the bilingual stuff, because there are so many words that need to be translated on-the-fly -- the more economical approach is to adjust the way the bilingual theme looks, to suit your business, as per the 2 options above.
Currencies can indeed be changed to match!

Thanks to Tristan for the above link to our store. I must admit that I'm very pleased with the bilingual theme offered by Shopify Ninjas - everything works great and it's very easy to set-up. I will be keeping this theme for this store - although I do wish Shopify would offer this feature so that I can set-up another store with a completely different theme (there is one currently available on the Theme Store that would be just perfect for the other store!).

Eli here from the Shopify guru team. Rest assured that when it comes to multi-lingual solutions, we're very much listening and storeowners do have our attention. Right now, the best ways to make multi-lingual stores a reality are either the Shop Translator app ( https://apps.shopify.com/shop-translator ) or the Shopify Ninjas bilingual theme, per what you had mentioned. Where the latter is concerned, we aren't able to support any changes, errors, or issues, but as you mentioned, the team over at SN is notoriously great!
To that end, there is extensive discussion going on on a regular basis about how to make the platform more natively friendly to multiple languages. I would not want to commit to a date for execution of a solution here (as our priority is shipping top tier product), but your interest here isn't falling on deaf ears.

Guys, have any of you seen Sphero's website (http://www.gosphero.com) - they seem to have a fully multi lingual site with checkout in the correct language.
Anyone have any ideas on how they are doing this? They seem to be doing something clever with the domain.
