Which IPad should I purchase?

I’ve been trying to purchase an iPad for my POS since February, but haven’t been able to get one because of product shortages.  Now that the next gen of iPads have been released, I want to make sure I’m getting everything I need before I pull the trigger.  

I run a full online store, plus a full time mobile boutique, about 10,000 skus and expanding.  Most of my on the road shows do not have access to Wi-Fi.  Which model iPad do I need to run my POS?

what other hardware items are recommended?  I’ve been running just off my iPhone for two years.

If you get an older iPad you might be able to keep the POS Classic.  The new POS is TERRIBLE, so I would avoid it at all costs.

I’m already on the new POS, and other than now having to pay for features that used to be included, I don’t mind the new version.

I didn’t have an option to continue on the classic version.
