I'm looking for a solution where a customer can buy any product on our store as a gift, add a gift message and this message be sent to the recipient via email (not using a packing slip).
We are moving away from adding packing slips due to cost and environment reasons but still want people to be able to send a gift message something along the lines of "Your special gift from XX is on it's way to you!!"
All of the apps that I have seen seem to focus on either physical messages or gift vouchers/cards and not messages.

@jordanmaskell, There are two workarounds to implement this feature.
1. Leverage the 'note' field on the cart page, to collect the gift messages if you're not already collecting customers' notes. Otherwise, customers won't be able to add other notes except gift messages. You will see the message in the note field on the specific order in Shopify admin. https://shopify.dev/docs/themes/liquid/reference/objects/cart#cart-note
2. You may also use the cart's attributes field if you're already using the 'note' field for some other purpose. This information will be available under the 'Additional Details' in the specific order from the Shopify admin. https://shopify.dev/docs/themes/liquid/reference/objects/cart#cart-attributes
