Payment gateway options are largely regionally based, and so the options available to you in ‘Setting > Payments’ will be determined by which country your store is based in. The countries that are eligible to use Shopify Payments are found here. If your country isn’t on that list, then you’ll need to use one of the third party gateway options that is integrated for your region found here.
If you do need to use a third party gateway, like Stripe or another one listed for your region, please start by creating an account with the provider first. Then, once you have your account credentials, you can easily configure it to your Shopify account following the steps in the Help Doc for Configuring third party providers.
