Handling tax

My store is based in the UK www.tangled-yarn.co.uk so I need to show my products with the VAT but as I'm selling more outside the EU. I need my store to take off the VAT for non-EU customers at the checkout. I understand from Shopify that it can be done in the coding but as my store offer products in multiple variants it’s not so straight forward. I don’t want the price to show differently on the actual products, just at the checkout. So I'm looking for some one who can help with this.
