Great website, I like the color scheme, and overall layout looks good. After reviewing your website in more details I can suggestion some ideas that came to my attention.
1. On the collections page where all of the products are listed I would make the sale price bold, and original price lighter. This would help focus on the sale price rather the the original price which is crossed out.
2. On the Product Details Page there is a lot of great information your are giving your customers, I would space out the content a bit more so the page can bit a bit clearer. Also If a product is sold out, A great way to avoid losing that sale can be to setup an email form so you can be contacted about a sold out product.
Also There are many apps that help with conversion, such as adding your products to additional Sales Channels, Abandon Cart.
