Adding another space at checkout for customer to fulfill

Hi,

I would like to add another empty space at the checkout where customers can leave additional information.

I'm selling leggings and I would like to add space where customers could leave the information on their height so I can then moderate the length of the leggings before sending them out.

How can I achieve this?

Additionally, I wonder if there's a way of connecting this to a certain payment method? So If they want to select this option of modified length they have to pay the product in advance?
