Default display an image not associate with a variant on the product page

I have a handmade umbrella product that has two possible handles. When I make the handle colors into variants and assign images to them, Shopify insists on showing the handles, not the umbrella when people come to the product page. 

I tried making a variant called "select" with the image I want but customers could actually order this instead of a real variant.

How do I fix this?
