You can absolutely give your abandoned cart email a bit of a spruce up!
Adding or changing your logo can be done by going to Settings > Notifications, click "Customize" and uploading your logo in the space provided.
You can also add some discounts to your abandoned cart emails. We have a great guide on automatically applying discounts to Abandoned Cart emails as well.

We also have a range of email marketing apps with customisable abandoned cart emails (as well as other newsletter options). You can find a list them of in the Shopify App Store . I would recommend Seguno, as it's designed similarly to our theme editor, so it should feel natural to edit.

You can absolutely add an image. You'll just need to add some coding which I'll elaborate on below.
Firstly, you'll want to head to Settings > Files and upload the image there. Once the image is uploaded, it'll have a URL attached to it. You'll need this shortly, so make sure to take note of it.
From here, go to Settings > Notifications > Abandoned Checkout, and you'll see the html for the email. Simply add the following code wherever you'd like the image to appear (and add your URL in the "paste your image URL here" bit:
