I'm trying to import a csv file (with the correct utf-8 encoding), that I started from the csv template shopify provides.
and I keep receiving the following error: Invalid CSV Header: Missing headers: Title
The title is clearly included (there's 12 variants)
Am I missing something? Thank you!

Hyde here from Shopify. Great question!
When using a CSV file there are certain rules for each column. The Title column, for example, must not have any blank or missing fields. So if your product has variants, the idea is to use the dedicated column for that Variant Inventory Qty:
