"v=spf1 include:shops.shopify.com ~all" would be the official SPF record we provide to our store owners. If you have more than one SPF record, then you may need to combine the records within your DNS settings for the @shopify.com to be removed. Removing the @shopify.com from the emails would be the same process as above, where you need to add a TXT record to your domain.
Our help guide here also dives into how to edit your DNS settings should you need it! For the avatar, as we don't provide a full email service, it wouldn't be possible to add an avatar directly. However, you could attempt to use Gravatar to see if that will work.
