Tag a product within an order after order has been placed

We are trying to find a way to auto-tag products within an order AFTER the order has been placed. We already auto-tag orders, but this needs to be on a product by product basis within the order.

The use case is, if a product has been customized, then we want to tag that product as customized so that our warehouse does not fulfill that product in the order only, but still fulfills the rest of the order.

Is there a way (or an App), that can tag a product within an order after the order has been placed?
