For Google Merchant Center I need to have my size attribute in English (Size) so Google Merchant Centre adds that attribute to the products in my feed. But my website is in dutch so I actually do not want Size to show up anywhere on my website. It needs the be the dutch word Maat. Is there some way to translate it without doing that in the product attribute field so Google Merchant Center still sees it as Size and get's te value?

That is not required. Attribute naming convetion can be US-English. And if the target country is Belgium. Then Google will automatically translate all attribute naming conversions and pre defined values such as gender, age group etc...
Simply make sure you use one and the same language and not a mix and match for Attributes and predefined values.
However I'm confused why you say, I do not want size to be on your website. Why do you say that? The name Size or Maat is defined by yourself for the website. This name should also not be used in any attribute naming convensions.
I recommend you check with the data feed app support team.
Google Mercant Center doesn't read out the word Maat. My variants are now called Maat which is dutch for Size.
I changed one to size and the size attribute immediatly appeared in my Google Merchant Center. The problem is that is now also shows up as Size on my product page on my Dutch website, which I am not liking because I have a dutch website.
So the size attribute is now correctly in Google Merchant, but now the wrong language is on my product page.
Basically I need a way that I still name the variant Size but it shows up translated to Maat on my product page etc so it still get's read out right by Google Merchant
Not sure what you want to achieve. So let me explain the policy. If you are targeting the Netherlands or Belgium, the language on the website and in the feed must be Dutch, not English.
The only values that can be English are pre defined values, such as age group, gender, etc...
So even if you want to add the word size, you should not as this will violate the editorial guidelines.
Size is one of those values right? If I fill in Maat google doesn't recognize is for the feed. I changed it to size and now he does but my homepage also shows size. I explained it as good as I could. I think the fact that we are both not English native is making it difficult.
I know I can change it to maat in the product variants on Shopify. But Google Merchant Center doesnt read out Maat

Regardless of what you want to achieve. The same rule applies.
If you are targeting Dutch as your language and if the feed attribute naming convention is Dutch, maat is accepted. But if your naming convention is Enlisgh Maat is not accepted and you need to use English, ie size.
Your mixing naming convention with value convention. These are two different things. In Dutch, the naming convention can be English or Dutch, but must be all the same.
If you want a uniformed system, consider using my application. As I notice you are struggling with the data feed. As I specialize in Google Shopping. Your experience will be better.
Literally ever video online say it needs to be in English for Google to read it... I literally change it from Maat to Size yesterday and everything worked fine in the feed... When it was Maat Google didn't recognized it!!!! It only recognizes values like Color/Size etc I hope someone comes and knows how to translate it. Thank you for your insights tho!
I can change it back to Maat right now and the size value will dissappear from Google Merchant Centre. I have no idea why you keep misunderstanding me but it is ok..
The issue is your app, consider talking to the support team of the app you are using.
