Is there a way to break out platform and transaction fees by item/product ordered?

Thank you for reaching out to the Community! If using Shopify Payments, you can refer to the payouts to find details regarding credit card fees. This can be located under Settings > Payments > View Payouts and will be broken down by order as opposed to product. For more information on payout details, you can check out our Getting Paid with Shopify Payments documentation.
To locate platform fees, this will be located Finances > Billing and/or Settings > Billing (depending on your location). This is broken down within the Bill Overview, under the Subscription section and can refer to this Understanding Your Bill documentation for additional details.

Thank you, Blair. Yes, we are using Shopify Payments. However, is there anywhere that breaks down those fees by product or item, rather than just by order? What I'm looking to do is assign fees by product category to split two separate company divisions that are selling on one site.

Great to hear! This would however, be a limitation of the payouts as credit card fees associated with Shopify Payments are applied per order as opposed to each product/variant. For more information on the breakdown of how fees are charged for Shopify Payments, you can refer to our Plan and Pricing documentation.
If you're looking to charge more based on a specific product or vendor, you can look to adjusting the product pricing to ensure customers are charged accurately moving forward. We have a great Pricing Your Products Guide you can check out for more information!
