Help Implementing Dynamic VAT Rates Based on Metafields

Hi Shopify Community,

I run an exclusive sneaker store on Shopify and am facing a unique challenge with VAT rates. My inventory includes sneakers bought under two different schemes: some from private individuals where a 0% (margin) VAT scheme applies, and others from B2B purchases which require a 21% VAT rate. This VAT variation often depends on the specific size of the product.

I'm looking to streamline my pricing strategy by integrating dynamic VAT rates using metafields. Ideally, I want the VAT rate to automatically adjust based on the rate specified in these metafields (in the backend) the customers don't necessarily need to see which rates we charge. 

I'm curious if anyone in the community has tackled a similar issue or has insights on how to effectively set up such a system.
