Financing, tax rates, and accounting
My tax consultant wants a receipt for every booking on my bank account.
I can't provide that though since Shopify collects the payments of the customers and then sends them collected.
What do I do?

I'm not sure if it will suffice for what your accountant is seeking, but you can export a detailed CSV file for individual transactions in your payouts.
From your homepage in your admin, look for the 'View all payouts' link in the RH column:
Then click the "Transactions" button at the top of the screen
Next, click the 'Export' link at the top of the page:
In the pop up window, you can choose to export just the transactions visible on the current page, transactions from a specific date range, or all transactions. It will send a download link for the file to your email.
The CSV file will have details from each transaction, including the order #, total sale amount, transaction fee, and net payout amount.

I understand your tax consultant wants a receipt for every booking on your bank account. Just to clarify, did you mean the receipts for all the orders? Or, the receipts for the payouts from Shopify Payments?
You can export orders to a CSV file (spreadsheet) or export the transactions from your payouts, then see which option your tax consultant prefers. With exporting orders, you can export the order along with the transaction histories or only the transaction histories of your orders. As for exporting the transactions, you can find the export function when viewing your payouts and the file will also be a CSV file.

I would love an invoice of every payout as PDF which consists of the individual orders, fees and taxes.
This I could then link to my bank account booking in lexoffice and it would be understandable.
Is that possible?

Though the transactions in your payouts do consist of the individual orders, fees, and taxes, the export is a CSV file and you'll need to convert the file to a PDF. You can export the transactions when you view your payouts, you'll find the expert button near the top of the Payouts page. After exporting the CSV file, you can convert the file to PDF with a spreadsheet programs (eg. Excel, Google Sheets, etc.) or by using a free CSV to PDF converter, like ZAMZAR.
There are third-party apps, such as PDF Invoice: Order Printer+ or Mega PDF Invoice Generator, and they can help generate your orders/invoices as PDF. These apps will work great for orders, as they'll also include the tax details. However, I can't be sure that they can help with showing your fees on a PDF, as the orders do not include your merchant fees. If you need any help with these apps, you can always reach out to the developer through the contact information found in the Support section of their app's page.
As spreadsheets are a common file type for accounting purposes, do you know if your booking in lexoffice works with other file types?
